Luisana Mendez Escalante (She, Her, Ella)

Founder and Executive Director

Hi I’m Luisana, originally from Venezuela, a Civil Engineer and Urban Planner with over 15 years of experience in the public and private sectors. My professional journey includes a Master’s degree in Urban Planning, with research focused on urban infrastructure and service networks—key elements in building sustainable and resilient cities. Throughout my career, I’ve led multidisciplinary projects, fostering collaboration, leadership, and a positive impact on communities.

Beyond my profession, I’m passionate about the outdoors and connecting with nature. I love exploring the world through activities like hiking, camping, and paddleboarding, as well as reading, writing, photography, and diving into creative projects. These passions inspired me to found Huellas Latinas, an organization that connects the Latino community with nature, promoting well-being, inclusion, and collective empowerment. As Founder and Executive Director, I have the privilege of leading outdoor activities year-round and guiding others to rediscover the natural beauty that surrounds us.

I hold certifications in Wilderness First Aid, Forest Therapy Guide, and as an Archery Instructor, which reinforce my commitment to safety, learning, and creating meaningful experiences in every adventure. For me, Huellas Latinas is not just an organization; it is the reflection of my personal mission: to inspire, empower, and build a vibrant community connected with nature and one another.

Katherine Payer (She, her, Ella)

Board Chair

I am Katterine Payer, a business consultant and strategic coach. I was born in Lima, Peru, and my journey first took me to Minnesota in 2007. After an internship in hospitality, I settled in North Shore, where for over a decade I led as Operations Manager at Cascade Vacation Rentals, the largest vacation rental company in the region. From there, I transitioned into the technology sector, strategically advising SAAS companies, where I helped implement best practices in sales, marketing, and revenue management for hotels and resorts in multiple countries. My positivity and calm energy allow me to face challenges with a constructive attitude, and outside of work, I love traveling, hiking, and enjoying music and dance, actively volunteering with Huellas Latinas and Kuyaiki Peru, where I can connect with my roots and contribute to the growth of vibrant and empowered communities.

Juan Carlos Rodriguez Muñoz (He, His, Him, Él)

Vice Chair

Hello, I’m Juan Rodriguez Munoz, a Registered Nurse specializing in nursing informatics. Originally from El Vigia Merida, Venezuela, I now proudly call the Twin Cities home. When I’m not working, you’ll find me outdoors, exploring nature, attending festivals, and soaking up live music and the performing arts. Joining Huellas Latina lets me combine my passions for well-being, the great outdoors, and connecting with the vibrant Latino community. Together, let’s create a healthier future and build a stronger community.

Excited to embark on this journey with you all! Feel free to connect and get to know me better!

I bring to Huellas Latinas all my expertise in founding and managing NGOs and public policy and management studies from New York University (NYU). I found my passion in hiking while leading the international group of students at NYU Wagner. Huellas Latinas was the one who gave me the opportunity to continue with this passion with the plus of bringing it closer to the Latino community.

Board Member

I’m a Venezuelan immigrant who came to the U.S. in 2018. I have an 11-year background in Economics, Finance, and Banking. I started my career in the U.S. as a volunteer in December 2019 with Prepare and Prosper. In November 2020, I joined CAPI USA as Financial Coach and eventually became the Financial and Homeownership Services Manager. My job is to help others like me who are trying to rebuild their lives for themselves and their families. I’m passionate about knowledge and wisdom and am a lifelong learner. I wear multiple hats, a wife, a mom, a member of the community; being a role model for my son inspires me to become a better person daily. I enjoy outdoor activities, and paddle boarding is my favorite one.
